Mobile food trucks give college students more dining options

Northeastern University in Boston and the University of Massachusetts Amherst have food trucks and Boston University is trying to start one, joining a national trend of colleges launching their own food trucks. The Boston Globe says the mobile eateries have exploded in popularity in cities around the nation, and provide a solution for colleges with centralized dining and decentralized student housing. The trucks help campus food programs generate new income streams and help them hold onto student food dollars that might otherwise be spent elsewhere.
